About this recipe: The is a great sponge cake for celebration cakes such as birthday cake. It's close textured but still moist and light. It also holds up well to being sliced into layers and also butterceams and fondant icing.
This is essentially a Madeira cake mix which stands up well to slicing and sugar paste icing. However, if you chose to use sugar paste, spread a thin layer of buttercream over the cake before using the sugar paste.
