About this recipe: Kheer is rice pudding from India, a very popular dish for dessert. Made usually with three ingredients - rice, sugar and milk - its flavour is enhanced by adding fruit, saffron, cardamom and almonds.

Serves: 8 

  • 185g rice, rinsed
  • 2L milk
  • 200g granulated sugar
  • 180g chopped or flaked almonds
  • 4 tablespoons cashews
  • 1/2 teaspoon ground cardamom
  • 4 tablespoons raisins
  • 10 to 12 whole almonds, to garnish

  1. Soak rice in plenty of water for about 30 minutes.
  2. Bring milk to the boil in a large saucepan and add soaked rice. Reduce to a simmer and cook for about 1 hour, stirring frequently, till the rice is cooked and the mixture thickens.
  3. Add sugar, chopped almonds, cashews and cardamom. Cook till sugar dissolves. Turn off the flame and add raisins.
  4. Garnish with whole almonds and serve in a large bowl or individually, your call!


Kheer is served both warm or cold. But can be enjoyed more if serve cold.
