    About this recipe: Oats are baked in milk alongside strawberries and blueberries, chia seeds and oat bran. Packed with protein and fibre, this breakfast will keep you full and energised until lunchtime.

    Ingredients
    Serves: 6 

    • cooking spray, as needed
    • 120g oats
    • 75g brown sugar
    • 25g oat bran
    • 30g chia seeds
    • 1 teaspoon baking powder
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon citrus peel
    • 1/4 teaspoon salt
    • 475ml milk
    • 2 eggs
    • 3 tablespoons honey
    • 1 1/2 tablespoons butter, melted
    • 1 1/2 teaspoons vanilla extract
    • 160g fresh strawberries, chopped
    • 140g fresh blueberries

    Method

    1. Preheat oven to 190 C / Gas 5. Spray a 20cm square glass baking dish with cooking spray.
    2. Mix oats, brown sugar, oat bran, chia seeds, baking powder, cinnamon, peel and salt together in a bowl. Whisk milk, eggs, honey, butter and vanilla extract together in a separate bowl.
    3. Layer strawberries into the prepared baking dish; top with oat mixture. Pour milk mixture over oat mixture and top with blueberries.
    4. Bake in the preheated oven until lightly browned and set, 23 to 28 minutes.
