Break off the broccoli florets; finely chop and set aside. Place the broccoli stalk with 250ml of water and puree in a blender. You will need a total of 475ml of green water - if you have more then you can discard the extra liquid. If you have less, then add more water.
Heat oil in a saucepan over medium heat. Add minced garlic and cook for a few minutes. Stir in the rice and cook for a few more minutes.
Add the chopped broccoli florets and green water; bring to the boil. Reduce heat to low and simmer until rice is tender and cooked.
Fluff the rice with a fork and squeeze lemon juice on top just before serving.
