Broccoli cooked with rice is a delicious side dish and a little bit different than eating normal white rice! It requires blending the broccoli stalks with water to get green cooking water for the rice and broccoli florets.
Break off the broccoli florets; finely chop and set aside. Place the broccoli stalk with 250ml of water and puree in a blender. You will need a total of 475ml of green water - if you have more then you can discard the extra liquid. If you have less, then add more water.
Heat oil in a saucepan over medium heat. Add minced garlic and cook for a few minutes. Stir in the rice and cook for a few more minutes.
Add the chopped broccoli florets and green water; bring to the boil. Reduce heat to low and simmer until rice is tender and cooked.
Fluff the rice with a fork and squeeze lemon juice on top just before serving.
