Broccoli rice

    Broccoli cooked with rice is a delicious side dish and a little bit different than eating normal white rice! It requires blending the broccoli stalks with water to get green cooking water for the rice and broccoli florets.

    Serves: 4 

    • 1 head of broccoli
    • 2 tablespoons olive oil
    • 1 tablespoon minced garlic
    • 180g uncooked rice
    • salt to taste
    • 1 lemon juice for serving, optional

    1. Break off the broccoli florets; finely chop and set aside. Place the broccoli stalk with 250ml of water and puree in a blender. You will need a total of 475ml of green water - if you have more then you can discard the extra liquid. If you have less, then add more water.
    2. Heat oil in a saucepan over medium heat. Add minced garlic and cook for a few minutes. Stir in the rice and cook for a few more minutes.
    3. Add the chopped broccoli florets and green water; bring to the boil. Reduce heat to low and simmer until rice is tender and cooked.
    4. Fluff the rice with a fork and squeeze lemon juice on top just before serving.
