Goa chicken masala curry

    An Indian red masala curry recipe from Goa. My mother used to make for special occasions! It involves making your own masala paste but it's worth it!

    Serves: 6 

    • 6 red chillies
    • 4 peppercorns
    • 4 whole cloves
    • 1 (2.5cm) piece of cinnamon
    • 1 tablespoon cumin seeds
    • 1 teaspoon corriander seeds
    • 4 to 6 cloves of garlic
    • 1 (2.5cm) piece of fresh ginger
    • 2 tablespoons oil
    • 1 large onion, finely chopped
    • 1 whole chicken, cut into large pieces
    • water as needed
    • 2 tablespoons tamarind juice, or to taste
    • salt , to taste
    • freshly chopped coriander leaves

    1. Grind red chillies, peppercorns, cloves, cinnamon, cumin seeds, coriander seeds, garlic and ginger together in a mortar and pestle or food processor until it turns into a paste.
    2. Heat 2 tablespoons of oil in a large pot. Add chopped onions and fry till they are golden brown. Stir in masala paste and cook for 2 minutes. Add pieces of chicken; mix well and pour in enough cold water to cover the chicken.
    3. Bring to the boil; cover and simmer until chicken is cooked through, about 30 minutes. Season to taste with salt and tamarind juice. Stir well and let cook for additional 5 minutes. Garnish with fresh coriander leaves.
