An Indian red masala curry recipe from Goa. My mother used to make for special occasions! It involves making your own masala paste but it's worth it!

6 red chillies
4 whole cloves
1 (2.5cm) piece of cinnamon
1 tablespoon cumin seeds
1 teaspoon corriander seeds
4 to 6 cloves of garlic
1 (2.5cm) piece of fresh ginger
2 tablespoons oil
1 large onion, finely chopped
1 whole chicken, cut into large pieces
water as needed
2 tablespoons tamarind juice, or to taste
salt , to taste
freshly chopped coriander leaves

Grind red chillies, peppercorns, cloves, cinnamon, cumin seeds, coriander seeds, garlic and ginger together in a mortar and pestle or food processor until it turns into a paste.
Heat 2 tablespoons of oil in a large pot. Add chopped onions and fry till they are golden brown. Stir in masala paste and cook for 2 minutes. Add pieces of chicken; mix well and pour in enough cold water to cover the chicken.
Bring to the boil; cover and simmer until chicken is cooked through, about 30 minutes. Season to taste with salt and tamarind juice. Stir well and let cook for additional 5 minutes. Garnish with fresh coriander leaves.
