Makes: 2 loaf cakes
60g dark chocolate
400g caster sugar
235ml vegetable oil
250g grated courgette
1 teaspoon vanilla extract
250g plain flour
1 teaspoon bicarbonate of soda
1 teaspoon salt
1 teaspoon ground cinnamon
125g dark chocolate chips

Preheat oven to 180 C / Gas 4. Lightly grease two 2lb loaf tins.
In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.
In a large bowl, combine eggs, sugar, oil, grated courgette, vanilla and melted chocolate; beat well. Stir in the flour, bicarbonate of soda, salt and cinnamon. Fold in the chocolate chips. Pour mixture into prepared loaf tins.
Bake in preheated oven for 60 to 70 minutes, or until a skewer inserted into the centre of a loaf comes out clean.
