Spicy sweet potato and carrot soup

    A spicy carrot and sweet potato soup that's vegan and delicious. The chilli flakes and cumin add just the right amount of warmth.

    Serves: 4 

    • 1 tablespoon oil
    • 3 small onions, chopped
    • 2 cloves garlic, crushed
    • 3 medium sweet potatoes, peeled and chopped
    • 3 medium carrots, chopped
    • 1 medium white potato, chopped
    • 1/4 teaspoon dried chilli flakes
    • 1/2 teaspoon ground cumin
    • 900ml vegetable stock

    1. In a large saucepan, fry the onion and garlic in the oil for a few minutes until soft.
    2. Add the sweet potato, carrots, potato, chilli flakes and cumin and saute for a couple of minutes, then add the stock and simmer for 25 to 30 minutes.
    3. Blend to desired consistency.
