Preheat oven to 190 C / Gas 5. Line 2 muffin trays with 24 paper cases.
Stir strawberries, lemon extract and 1 teaspoon caster sugar together in a bowl.
Whisk flour, 100g brown sugar, 100g caster sugar, bicarbonate of soda and salt together in a large bowl. Pour milk, oil and eggs into flour mixture and mix until well-combined; stir in strawberries. Spoon the mixture into paper cases or muffin tin.
Bake in the preheated oven until a skewer inserted into the centre of a muffin comes out clean, about 25 minutes. Transfer muffins to a wire rack to cool completely.
