Strawberry and lemon muffins

    These fresh strawberry and lemon muffins will have you going back for seconds and thirds.

    Serves: 24 

    • 325g chopped strawberries
    • 4 teaspoons lemon extract
    • 1 teaspoon caster sugar
    • 345g plain flour
    • 100g light brown sugar
    • 100g caster sugar
    • 1 tablespoon bicarbonate of soda
    • 3/4 teaspoon salt
    • 180ml milk
    • 120ml vegetable oil
    • 2 eggs

    1. Preheat oven to 190 C / Gas 5. Line 2 muffin trays with 24 paper cases.
    2. Stir strawberries, lemon extract and 1 teaspoon caster sugar together in a bowl.
    3. Whisk flour, 100g brown sugar, 100g caster sugar, bicarbonate of soda and salt together in a large bowl. Pour milk, oil and eggs into flour mixture and mix until well-combined; stir in strawberries. Spoon the mixture into paper cases or muffin tin.
    4. Bake in the preheated oven until a skewer inserted into the centre of a muffin comes out clean, about 25 minutes. Transfer muffins to a wire rack to cool completely.

    I made this a few days ago and it was delicious!! I didn't have lemon extract, though, and took advice from other readers and used lemon juice (almost 1/4 cup). It was great and will make again, but I did purchase lemon extract.  -  21 Feb 2018  (Review from Allrecipes US | Canada)


    I messed up. I should have used the lemon extract but instead used fresh lemon juice by it self. Had I added grated lemon peel to the juice it would have been perfect. Instead I ended up with strawberry muffins. No lemony taste. Stick to the recipe!  -  02 Feb 2018  (Review from Allrecipes US | Canada)
