Strawberry and spinach quinoa salad

    This quick and easy salad is a combination of quinoa, baby spinach leaves, strawberries, walnuts and feta cheese.

    Serves: 8 

    • 170g quinoa
    • 475ml water
    • 4 teaspoons lemon juice
    • 1 teaspoon olive oil
    • 60g baby spinach, or to taste
    • 250g walnuts
    • 120g feta cheese, crumbled
    • 75g thinly sliced strawberries, or to taste

    1. Place quinoa in a saucepan; add water and bring to the boil. Reduce heat; cover. Simmer until quinoa is tender, 12 to 15 minutes. Drain; cool.
    2. Combine lemon juice and olive oil in a small bowl; stir until dressing is combined.
    3. Pour half of the quinoa into a large salad bowl. Add 1 handful of baby spinach; stir together. Add 1 handful of walnuts, feta cheese and strawberries; stir until mixed. Repeat layering and stirring quinoa, spinach, feta cheese and strawberries until all ingredients are mixed together. Top with lemon-olive oil dressing.

    Light, fresh and delicious! I did eyeball the oil and lemon juice (to taste) and added just a bit of salt, but those were my only changes.     This is good, but kind of bland. In the future, I'll add salt and pepper to the dressing at the very least. Maybe some cayenne or basil or mustard or something, too. As written, the feta pretty much overpowers all of the other flavors.  -  06 Mar 2018  (Review from Allrecipes US | Canada)
