About this recipe: Tomatoes, cucumbers, red and green peppers and radishes are tossed with olive oil, sumac and lemon juice.


Serves: 3 

  • 2 vine-ripened tomatoes, cubed
  • 1 red pepper, cubed
  • 1 green pepper, cubed
  • 1/2 seedless cucumber, cubed
  • 2 radishes, cut into very small cubes
  • 2 tablespoons extra-virgin olive oil
  • 1 scallion, thinly sliced
  • 1 teaspoon lemon juice, or to taste
  • 1/2 teaspoon ground sumac
  • salt to taste

  1. Toss tomatoes, red pepper, green pepper, cucumber, radishes, olive oil, scallion, lemon juice, sumac and salt together in a bowl; let stand for flavours to blend, about 20 minutes.
