Creamy apple and fennel bake

    Fennel bulbs are coated in turmeric and baked with slices of apple, grated carrots and coconut milk in this easy vegetarian side dish that is paleo-friendly.

    • 1 teaspoon olive oil
    • 2 large fennel bulbs, halved crosswise
    • 2 teaspoons ground turmeric
    • 3 carrots, grated
    • 1/2 apple, thinly sliced
    • 60ml coconut milk

    1. Preheat oven to 190 C / Gas 5. Grease a baking dish with olive oil.
    2. Place fennel halves in the dish; dust them with turmeric. Cover with grated carrots and slices of apple. Pour coconut milk on top.
    3. Bake in the preheated oven until slightly tender, about 20 minutes. Flip fennel halves and mix well. Cover baking dish and continue baking until tender, about 20 minutes more.
