Peanut butter mousse

    Whip up this quick and easy mousse-like dessert for one. All you need is peanut butter, Greek yogurt and chocolate chips.

    Ingredients
    Serves: 1 

    • 2 tablespoons peanut butter
    • 50g thick Greek yogurt
    • 1/2 teaspoon stevia, or to taste
    • 1/8 teaspoon vanilla extract
    • 1 tablespoon chocolate chips, or to taste

    Method
    Prep:5min  ›  Cook:1min  ›  Ready in:6min 

    1. Microwave peanut butter in a microwave-safe bowl until liquid and smooth, but not hot, about 20 seconds.
    2. Stir Greek yogurt into the peanut butter with a spoon until smooth, scraping off any excess peanut butter stuck to the spoon. Stir in stevia and vanilla extract. Fold in chocolate chips.

    Note:

    For a stronger peanut butter flavour, use up to 3 tablespoons peanut butter.

    1.11.17 First, I must say after looking at the nutritional breakdown, I’m not convinced how “healthy” this is, but I can say that it is delicious. Certainly is quick to prepare, and if piped into a dish or a small glass, actually has good presentation (nice enough for a company dessert). I just sprinkled on a few chocolate chips rather than mixing in, and the consistency is incredibly smooth and peanut-y. Next time, I'm going to add more vanilla Greek yogurt which I think will lighten the mousse texture even more. I can see mixing in some chopped banana or even some crisp pieces of bacon.     I used Adam's peanut butter and plain low-fat yogurt, so it turned out a little thin. but it was really good as a late night, kind of want something sweet, but need protein, snack. made it with honey and omitted the choc chips, but only because I didn't have them.  -  24 Dec 2017  (Review from Allrecipes US | Canada)

    Not great, I thought it wasn't sweet enough. I also didn't like the tartness of the yogurt. It was also way to thick to me called a mouse in my opinion. I may try it again with vanilla yogurt.  -  05 Sep 2017  (Review from Allrecipes US | Canada)
