Here's a simple cheese sauce to spread over tortilla chips to make basic nachos. Add some slices of jalapeno chilli peppers to spice things up a bit!
I poured this over a tater-tot, one-dish supper, which I then topped with bacon bits, chives and a little chipotle-garlic seasoning. This didn't need additional salt in my view, because of the cheese (used Velveeta). It would go great over vegetables, natchos, as mentioned, and as a dip.
