    These quick and easy pancakes are perfect for sleepy weekend mornings.

    Serves: 4 

    • 125g plain flour
    • 2 tablespoons caster sugar
    • 2 teaspoons baking powder
    • 1 teaspoon salt
    • 1 egg, beaten
    • 235ml milk
    • 2 tablespoons vegetable oil

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. In a large bowl, mix flour, sugar, baking powder and salt. Make a well in the centre and pour in milk, egg and oil. Mix until smooth.
    2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 60ml for each pancake. Brown on both sides and serve hot.

    I was looking for an easy tasty pancake recipe and stumbled across this. I typically made coconut pancakes, but was looking for more of the 'real' thing without the bad feeling afterwards. I made these GLuten Free and substituted the All Purpose GF flour. It measures cup for cup the same as regular flour. I doubled the recipe for 2 adults & 2 teens, but clearly needed to triple it. I did make a few changes based on the reviews. I only added 1/2tsp of salt per recipe, added 1/2 tsp of vanilla per recipe, substituted unsweetened Vanilla Almond milk and added real butter instead of the oil.
