Crispy baked chicken thighs

    Seasoned with garlic, thyme, oregano and paprika, these delicious baked chicken thighs turn out crispy yet tender every time!

    Serves: 8 

    • cooking spray or oil
    • 8 bone-in chicken thighs with skin
    • 1/4 teaspoon garlic salt
    • 1/4 teaspoon onion salt
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon ground thyme
    • 1/4 teaspoon paprika
    • 1/4 teaspoon freshly ground black pepper

    1. Preheat oven to 180 C / Gas 4. Line a baking tray with foil and spray with cooking spray if you prefer an easy clean-up.
    2. Arrange chicken thighs on baking tray.
    3. Combine garlic salt, onion salt, oregano, thyme, paprika and black pepper together in a small container with a lid. Close the lid and shake container until spices are thoroughly mixed. Sprinkle spice mixture liberally over chicken thighs.
    4. Bake chicken in the preheated oven until skin is crispy, thighs are no longer pink at the bone, and the juices run clear, about 1 hour.


    You can finish cooking the chicken under the grill just before serving - watch carefully as the spices burn very quickly!

    We loved this chicken recipe. The only ingredient I didn't have was the oregano, and it still tasted good! Followed the recipe and the chicken came out crispy and juicy. I used boneless / skinless breasts instead of thighs W/ skin and bone! I do wish I would've doubled the seasonings as someone else had suggested, but the meal was still delicious! To finish the meal we had the "Elsie's Baked Mac and Cheese," recipe , with green beans and rolls. Suffice it to say "YES, we will be making this again! Best part no clean-up!     We picked up some thighs, legs and wings at the store over the weekend, looked on here for a good recipe to try tonight. Read a bunch of reviews and watched the video, decided to give this one a try. Glad I did. Followed the recipe verbatim except made the dry rub with 1 tsp of each ingredient. Sprinkled on both sides of thighs and all around legs. Unfortunately, the wings wouldn't fit the pan - will do those next time :o) Sprayed a rack with Pam and placed on top of the foil lined baking sheet, then turned them 1/2 way through. Great flavor and texture. Not greasy since drippings were in pan below rack. Went perfect with mashed potatoes, gravy from drippings and green beans. I posted a pic but it went somewhere else?
