Veggie Marmite tomato and bean autumn soup

    A hearty bean and tomato soup, perfect for chilly autumnal nights. Serve with a drizzle of cream on each bowl and a side of buttered toast, or whatever toasted bread you like.

    Serves: 3 

    • 1 tin tomatoes
    • 1 tin mixed beans, drained
    • 1 tin broad beans, drained
    • 3 new potatoes, quatered
    • 2 small handfuls peas
    • 2 small cloves garlic
    • dried basil and tarragon, to taste
    • 1 vegetable stock cube
    • 1/2 teaspoon Marmite®, or to taste

    1. Tip all tinned ingredients in a saucepan over medium high heat. Add the potatoes, peas, garlic and herbs. Cover with boiling water from the kettle, then add the stock cube and Marmite®. Bring to the boil, reduce to a simmer and cook till potatoes are soft.

    i just fancied a hearty veggie bean tomato soup , so I found all the canned beans and tomatoes and herbs and potatoes, i had in the house, tipped them all in a pan with water and a stock cube and herbs and a teaspoon of marmite,,let it boil , then simmer,,and in half hr it was ready,,really warm and yummy  -  28 Sep 2016
