    About this recipe: A moist traybake cake that's packed with chunks of apple and chopped walnuts. Serve plain or with a dollop of Greek yogurt. For special occasions, drizzle caramel sauce on top!

    Serves: 12 

    • 375g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 3 apples - peeled, cored and sliced
    • 200g caster sugar
    • 220g soft brown sugar
    • 295ml vegetable oil
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 115g chopped walnuts

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 23 x 32cm traybake tin. Sift together the flour, bicarbonate of soda, cinnamon and salt. Set aside.
    2. Combine the apples and the caster sugar; set aside. In a large bowl, mix together the brown sugar, oil, eggs and vanilla. Stir in the apple mixture, then the flour mixture. Fold in the walnuts.
    3. Pour cake batter into prepared tin. Bake in the preheated oven for 45 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.
