Fresh apple walnut cake

    A moist traybake cake that's packed with chunks of apple and chopped walnuts. Serve plain or with a dollop of Greek yogurt. For special occasions, drizzle caramel sauce on top!

    Ingredients
    Serves: 12 

    • 375g plain flour
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon salt
    • 3 apples - peeled, cored and sliced
    • 200g caster sugar
    • 220g soft brown sugar
    • 295ml vegetable oil
    • 2 eggs
    • 2 teaspoons vanilla extract
    • 115g chopped walnuts

    Method

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 23 x 32cm traybake tin. Sift together the flour, bicarbonate of soda, cinnamon and salt. Set aside.
    2. Combine the apples and the caster sugar; set aside. In a large bowl, mix together the brown sugar, oil, eggs and vanilla. Stir in the apple mixture, then the flour mixture. Fold in the walnuts.
    3. Pour cake batter into prepared tin. Bake in the preheated oven for 45 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow to cool.

    well, i really had high hopes for this recipes, but other than it being a REAL easy cake to make, i would not recommend it. It has an unappetizing texture, and it could have used far more apples and walnuts...probably more oil, as well. Better luck next time.  -  06 Oct 2002  (Review from Allrecipes US | Canada)

    I added a sweet glaze to lock in some moisture and served with ice cream. Didn't 'wow' everyone, but went over well. (Glaze:2c powdered sugar and 4tbsp milk. Poured over after baking) Will definately do again.  -  17 Sep 2004  (Review from Allrecipes US | Canada)
