Veg Mushroom Pan served with spinach and quinoa

    A simple vegan/vegetarian dish served with quinoa and spinach - simple and healthy.

    • 3 dl of wheat milk
    • 0,5 dl of flour
    • 200 g of mushrooms (brown)
    • 300 g of Quorn, in cubes
    • 1 cube of mushroom bouillon
    • salt and pepper
    • 100-150 g of fresh spinach
    • 1,5 teapoon of garlic powder
    • 1 teaspoon of cayenne pepper
    • 1 yellow onion
    • Quinoa (boiled in vegetable bouillon)


    1. Boil the quinoa according to instructions on the box, I recommend two portions for this dish.
    2. Cut the onion into small pieces, and the mushroom into bigger pieces. Add in a pan on high heat.
    3. Add in the quorn. Let fry until all the water is gone and make sure nothing burns. Add cayenne pepper and garlic powder.
    4. Meanwhile, mix the wheat milk and flour together and whisk. Try to get as small pieces as possible from the mushroom bouillon, and add into the mixture.
    5. Once the quron and mushrooms have gotten a little bit of a brown surface, lower the heat and add the wheat milk mixture into the pan.
    6. Rinse spinach and add salt and pepper to it, serve the quinoa and mushroom pan over it.
