Red cabbage and apple slaw

    A fresh and simple coleslaw made with red cabbage, onions and apple. It's delicious with leftover roast beef or pork.

    Serves: 4 

    • 1/2 head red cabbage, grated or shredded
    • 1/2 tsp salt
    • 2 apples, peeled and grated
    • 1/2 onion, chopped
    • 1 tablespoon olive oil
    • salt and pepper to taste

    1. Sprinkle salt on top of shredded red cabbage; mix well and set aside in the fridge for 30 minutes.
    2. Add grated apples to the cabbage, mix well. Stir in chopped onion and olive oil; mix well and season to taste with salt and pepper.
