Apple cookies

    Apples and the autumn are an awesome combination. These apple cookies are super tasty and just eating one will make you want another! Baking them on a higher temperature will mean the inside of the cookie remains lovely and chewy.

    Makes: 2 dozen

    • 130g self-raising flour
    • 120g rolled oats
    • 2 teaspoons baking powder
    • 1 teaspoon ground cinnamon
    • 160g light brown sugar
    • 160g granulated sugar
    • 80g butter, melted
    • 1 large egg
    • 1 generous teaspoon vanilla extract
    • 3 apples, finely diced (I used Braeburn)
    • demerara sugar, for sprinkling

    1. Mix the flour, oats, baking powder, cinnamon and sugars together. Add the butter, egg and vanilla and mix. Fold in the apple and chill the mixture in the fridge for half an hour before baking.
    2. Preheat the oven to 200 C / 180 Fan C / Gas 6.
    3. Using an ice cream scoop place dollops of cookie mixture on a lined baking tray.
    4. Bake cookies for 8 to 10 minutes in the preheated oven. Sprinkle with demerara sugar and leave to cool on a wire rack.


    To increase the apple flavour you can also add apple sauce to the recipe.
