Mexican chipotle chicken

    Mini chicken fillets are simmered in a spicy, smoky Mexican sauce made with chipotle peppers and cream.

    • 2 tablespoons vegetable oil
    • 1kg mini chicken fillets
    • 1/8 teaspoon garlic powder
    • salt and pepper to taste
    • 3 chipotle peppers in adobo (see note)
    • 250g pouring cream

    1. Heat the oil in a pan over medium-high heat. Season the chicken with garlic powder, salt and pepper; brown in the hot oil.
    2. Mash the peppers in a bowl, mix with the cream and pour over browned chicken. Simmer until chicken is fully cooked, about 10 minutes.

    Chipotle chiles in adobo are sold in tins so you can buy them in bulk. They are dried chipotle chilli peppers in a sauce. They add heat and a smoked flavour to your Mexican dishes. They are available online and in Mexican grocers.
