Cheesy chicken and rice

    Quick easy and tasty meal. Great use of fried chicken from the supermarket or any leftover chicken.

    Serves: 2 

    • oil for frying
    • 1 red onion, chopped
    • 1 carrot, grated
    • 4 rashers bacon
    • 2 bags boil in the bag rice
    • 2 pieces chicken, pre-cooked
    • 200g cheese sauce

    1. Heat some oil in a large frying pan. Add onion and cook till soft. Toss in the carrot and fry till beginning to take colour. Add chicken and heat through.
    2. Cook bacon in a frying pan or under the grill till crisp. Chop into pieces.
    3. Boil rice as instructed on packet.
    4. Add cheese sauce to pan with chicken and heat through. Once hot, add chopped bacon and rice and stir. Serve.
