Halloween pumpkin and apple soup

    A delicious and warming soup recipe and something to use up the insides of your Halloween pumpkins!

    Serves: 4 

    • 1 tablespoon olive oil
    • 1 onion, chopped
    • flesh of 1 large pumpkin, diced
    • 2 apples - peeled, cored and chopped
    • 1/2 teaspoon ground cinnamon
    • 1/2 teaspoon ground ginger
    • 1 pinch dried parsley
    • 1 low salt stock pot or cube
    • black pepper to taste

    1. In a pan with the oil, cook the onion until nice and soft. Add the pumpkin, apple, herbs and spices plus 1 litre of water mixed with your stock pot or cube.
    2. Bring to the boil, then reduce heat and simmer for 25 minutes or until the pumpkin and apples are soft.
    3. Add a little ground pepper. Purée using a blender until the soup is smooth.
