Chocolate granola

    This crunchy chocolate granola is versatile enough to used as for breakfast, a snack or a topping for yogurt or ice cream.

    Serves: 16 

    • 245g oats
    • 15g wheat bran
    • 25g oat bran
    • 30g milled flaxseed
    • 160ml honey
    • 60ml rapeseed oil
    • 60g dark chocolate chips
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon salt

    1. Preheat oven to 120 C / Gas mark ½. Line a baking tray with greaseproof paper.
    2. Stir oats, wheat bran, oat bran and flaxseed in a large bowl until well blended.
    3. Combine honey and oil in a saucepan; cook and stir over medium-low heat until mixture starts to boil, about 3 minutes. Lower heat to low and simmer for another 2 minutes.
    4. Remove saucepan from heat and stir in chocolate chips, vanilla extract and salt. Pour chocolate mixture over dry oat mixture and stir until well coated; spread evenly over prepared baking tray, gently pressing mixture down with spatula.
    5. Bake in preheated oven for 30 minutes. Rotate baking tray and continue baking until slightly crisp, about 30 minutes more. Remove baking tray from oven and cool granola until crisp, about 15 minutes. Break into chunks and store in an airtight container.


    For a finer textured granola, stir mixture every 15 minutes while baking.

    Outstanding!! This is a wonderful recipe for chocolate granola. I used Blue Agave syrup in place of the honey and was hoping it wouldn't ruin the recipe and it didn't, it worked well. I couldn't help myself and added 1/2 cup of sliced almonds. I didn't have flax meal and added nothing more because of it. I patted in down on the sheet and baked and cooled as instructed for a chunky texture. Perfect hint of chocolate that doesn't overtake the oatey wholesome goodness so it still tastes like granola and not a candybar. This is a keeper!     All I can Say is OUTSTANDING!! WOW! This is seriously some good Stuff!! I eat Granola daily to snack on and this is the Best iv had!! I almost feel Guilty for eating it!     This is a wholesome chocolatey treat that we absolutely love at our house. I first made this when it was a personal recipe before it became kitchen approved. My daughter loves it as a snack on its own…I add it to my yogurt and cereal for a delicious crunch and we all top our frozen yogurt with it when there is any left. I usually stick to the recipe except for the odd extra handful of chocolate chips. Also I watch the baking time fairly closely as I like it crispy but not overdone.
