Russian fish pie

    Super easy recipe for fish pie. Any fish would do. Recipe calls for canned fish, but leftover baked fish is also a good option.

    Serves: 8 

    • 250g soured cream (or full fat yogurt)
    • 1/2 teaspoon bicarbonate of soda
    • 3 eggs
    • 100g mayonnaise
    • 1 teaspoon salt
    • 150g plain flour
    • 1 (185g) tin fish canned in oil or water (salmon, sardines, etc).

    1. Preheat oven to 200 C / Gas 6.
    2. Mix soured cream and bicarb. Add eggs, mayonnaise, salt and flour. Batter will be thin, of pouring consistency.
    3. Butter cast-iron frying pan or pie tin. Pour in half the batter. Add fish, mashed with a fork. Then pour the rest of batter on top of fish.
    4. Bake for 30 minutes. After 30 minutes keep checking for doneness with a skewer, it should come out clean when inserted in the centre.
