    Ginger milk curd is a quick and easy dessert that is popular in China. Ginger juice helps the milk set to form a solid dessert. This recipe is for one portion but it is easily scaled up.

    • 250ml whole milk
    • 2 slices fresh ginger, minced
    • 1 tablespoon sugar

    1. Place the minced ginger in a small sieve or tea strainer over a bowl; press well to extract the ginger juice. Discard solids.
    2. In a small bowl, combine milk and sugar. Microwave on high for 1 minute. Stir, then microwave 1 more minute or until it simmers.
    3. Stir the ginger juice into the milk. Let sit 5 minutes or until it sets. Enjoy!
