Banana muffins for breakfast

    These muffins are not overly sweet. I often make them for my kids for breakfast.

    Ingredients
    Makes: 12 muffins

    • 250g plain flour
    • 2 teaspoons baking powder
    • 1 pinch salt
    • 2 to 3 very ripe bananas (ca. 300g total), mashed with a fork
    • 100g cane sugar
    • 4 teaspoons vanilla sugar
    • 100g butter, melted and cooled
    • 1 egg

    Method

    1. Preheat oven to 200 C / Gas 6. Grease a muffin tin or line with paper cases.
    2. In a bowl stir flour, baking powder and salt. In another bowl beat bananas, sugar and vanilla sugar. Stir in butter and egg till well combined.
    3. Fold banana mixture into flour mixture using a spatula, until just combined, to not overmix. Distribute in the prepared muffin tin.
    4. Bake in the preheated oven till a toothpick comes out clean, about 15 to 20 minutes. Turn the muffin tray once about halfway to ensure even baking.
