Greek green bean salad

    This green bean salad is great to serve with grilled meats or fish and it has an unmistakably Greek touch with tomatoes and feta cheese.

    Makes: 2 oder 3 Portionen

    • 500g green beans (fresh or frozen)
    • 3 tomatoes, diced
    • 2 tablespoons white balsamic vinegar
    • 4 tablespoons olive oil
    • salt and pepper
    • 1 to 2 shallots, minced
    • 1 small garlic clove, minced
    • 1 small handful fresh parsley, minced
    • 50g feta cheese, crumbled

    1. Trim the ends of the beans if using fresh. Wash.
    2. Bring a pot with salted water to the boil and cook the beans to the desired doneness depending how thick they are, about 3 to 7 minutes. They should still have some bite. Drain and add to a bowl with the tomatoes.
    3. In a small bowl whisk vinegar, olive oil, salt and pepper, then add shalllots, garlic and parsley. Crumble feta over the salad and mix. Let sit for a few minutes before serving.
