An indulgent fondue with pure maple syrup, a favourite in Quebec. Serve with fruit and pieces of sponge cake.

240ml real maple syrup
460ml single cream, divided
1 tablespoon cornflour
30g butter

Bring maple syrup to the boil in a saucepan; boil for 5 minutes.
In another saucepan, heat 400ml of the cream over medium heat, stirring constantly, until it reaches boiling point. Once boiling, gradually incorporate the boiling maple syrup.
Combine the remaining 60ml cream with the cornflour. Add to the maple mixture along with the butter, then reduce the heat to low and gently simmer for 10 minutes.
Transfer to a small fondue pot and place in centre of the table. Serve with fruit and pieces of sponge cake.
Tip
For a slightly lighter version, you could substitute approximately 100ml of the cream with whole milk instead.
