Pouding chômeur (Poor man's pudding)

    My mum's version of the classic French Canadian poor man's pudding (pouding chômeur), a self-saucing sponge pudding with a sweet caramel sauce that starts on top and ends up on the bottom after baking. For the ultimate experience, serve with vanilla ice cream.

    Serves: 6 

    • 200g plain flour
    • 3 teaspoons baking powder
    • 1 pinch salt
    • 60ml vegetable oil
    • 200g granulated sugar
    • 1 egg
    • 1/2 teaspoon vanilla extract
    • 240ml semi-skimmed milk
    • 475ml water
    • 220g dark brown soft sugar
    • 3 tablespoons butter

    1. Preheat oven to 180 C / Gas 4. Butter a 20-23cm square baking dish.
    2. Sift flour with baking powder and salt; set aside.
    3. In a bowl, beat oil with granulated sugar, egg and vanilla; gradually beat in the flour mixture, alternating with milk. Pour into baking dish.
    4. Heat the water in the microwave; add brown sugar and butter and mix to dissolve. Pour over the sponge mixture (the liquid will fall to the bottom while baking).
    5. Bake in the preheated oven for 40 minutes.
