Pets de sœurs (Brown sugar rolls)


    Pets de sœur or brown sugar rolls are a traditional French Canadian dessert. They are extremely simple to make and a great way to use up leftover pastry. This is my grandmother's version which adds peanut butter.

    Serves: 6 

    • leftover pastry dough, uncooked
    • creamy peanut butter
    • brown sugar
    • water

    1. Preheat the oven to 180 C / Gas 4.
    2. Roll pastry dough out to form a thin rectangle. Spread a layer of peanut butter over the pastry, stopping about 1 or 2cm from the edge. Spinkle a layer of brown sugar on top. Wet the edges with water and roll the dough up into a long roll. Slice into thick rounds and arrange the rounds in a baking dish. Add enough water to the dish so it reaches halfway up the dough.
    3. Bake in preheated oven until the pastries are golden brown and most of the water has evaporated.
