    This sweet and spicy ginger beer pulled pork is made in the slow cooker for a make-ahead dinner that the whole family will love.

    • 2 sweet onions, peeled and quartered
    • 2 teaspoons coarse sea salt, or to taste
    • 1 1/2 teaspoons dark brown sugar, or more to taste
    • 1 1/2 teaspoons smoked paprika
    • 1 teaspoon freshly ground black pepper
    • 1 teaspoon garlic powder, or more to taste
    • 1 teaspoon dried chilli flakes
    • 1 (2.7kg) pork shoulder
    • 375ml ginger beer

    1. Arrange sweet onions in the bottom of a slow cooker.
    2. Mix salt, brown sugar, paprika, black pepper, garlic powder and chilli flakes together in a bowl until seasonings are well mixed; rub all over pork. Place pork in the slow cooker, fat-side up.
    3. Cook on Low for 1 hour. Pour ginger beer into slow cooker. Continue cooking until pork is tender and pulls apart easily with a fork, 9 to 11 hours.
