Bavarian cheesecake

    • 200g flour
    • 1 egg
    • 75g butter
    • 65g sugar
    • 4-5 eggs
    • 150g sugar
    • Vanilla extract
    • Almond extract
    • 100g sugar
    • 500g quark (or cream cheese)
    • 1 tsp flour
    • 1 pinch of salt


    1. Make a pie crust: mix the first 4 ingredients (egg, flour, butter, sugar) and knead it into a dough. Flatten the dough and cover the base and sides of a large springform cake tin
    2. Mix the egg yolk and the sugar, then add almond and vanilla extract and butter (room temperature), last add flour and quark
    3. Beat the egg whites until they are frothy and whipped cream like, slowly stir in the egg and quark batter and pour it on the unbaked crust
    4. Bake at 180-200 degrees for 1 hour. If the top gets brown cover it with baking parchment to keep it from getting too dark. Open the oven a little bit and let the cake slowly cool down in the oven.


    Add fruit if you want, blueberries, cherries, etc.
