Mocha cake


    This delicious chocolate and coffee cakes is my very own adapted victoria sponge recipe. The chocolate and coffee go great together with the two flavored buttercream icings. You can choose to do either both or just one of the different flavor icings. It makes enough icing to cover the middle and top of the cake and at a push the edges.

    • 200g self-raising flour
    • 220g butter
    • 4 large eggs
    • 220g caster sugar
    • 2 tbsp coco powder
    • 1 tsp granulated instant coffee mixed with 1 tbsp boiling water
    • 1 tsp baking powder
    • for the butter icing
    • 125g butter
    • 300g plus extra icing sugar
    • 1 tbsp milk
    • 1 1/2 tbsp coco powder
    • 1 tsp granulated instant coffee mixed with 1 tbsp boiling water


    1. Preheat the oven to 180°C. Line and grease two 20cm round cake tins or a close size.
    2. Cream together the butter and sugar in a large bowl with an electric mixer.
    3. Add the eggs 2 at a time with the coffee mixing a little between. Careful not to let any undisintegrated coffee granules to go into the cake mixture.
    4. Sieve the flour into the mixture 1/2 at a time.
    5. Add both the baking powder and coco powder and mix thoroughly.
    6. Once your mixture is ready pour it into the prepared cake tins.
    7. Bake in the preheated oven for 25 - 30 minutes or until skewer comes out clean. Then place on a cooling rack to cool.
    8. Next to make the butter icing.
    9. soften the butter and gradually add the icing sugar and milk using an electric hand mixer careful not to make it too runny or stiff.
    10. Put half the icing into another bowl.
    11. To one of the bowls add the coco and mix well.
    12. To the other bowl add the coffee, again being careful not to add any undisintegrated coffee granules. You may find the icing becomes very runny and if so add some extra icing sugar to stiffen it up.
    13. Next choose how you want to put both icings on the cake. You can either put one flavor on top and one in the center or use a two part piping bag as I did or however you choose.
    14. once your sure the cae is cool, put icing on the top of one sponge and place the next sponge on top creating a sandwich and continue to apply the icing as you chose
