Here's an easy and delicious tuna spaghetti dish. The shallots and garlic give the sauce an exquisite flavour and the cream gives it a pleasant velvety texture. Add some chilli flakes to spice it up if you like.

1 tablespoon olive oil
2 shallots, chopped
3 clove garlic, mashed
4 tomatoes, diced
1 small bunch parsley, chopped
1/4 teaspoon hot chilli flakes
salt and freshly milled pepper
2 (160g) tins tuna in oil, drained
1 (300ml) tub double cream

Heat the oil in a large frying pan over low heat. Add the shallots and garlic and cook till soft, about 5 minutes. Mix in the tomatoes, parsley, chilli flakes, salt and pepper.
Slowly simmer for 10 minutes then add the tuna and cream and continue cooking making sure the sauce does not boil.
While the sauce is cooking, add the spaghetti to a large pot of boiling water and cook until al dente. Drain well and mix in the tuna sauce. Serve while still hot.
