Artichokes with French vinaigrette

    This is a very popular dish in France. Artichokes are steamed or boiled in salted water and simply served with a home-made vinaigrette. Prepared this way, you get to really enjoy their flavour. A delicious dish and so easy to prepare. When you get to the heart of the artichoke, remove the hair and fill the cavity with vinaigrette... it's like finding treasure after a long quest.

    Serves: 4 

    • 4 fresh artichokes
    • salt and freshly milled pepper
    • 50ml vinegar
    • 100ml oil

    1. Cut the stems of the artichokes; remove the outer leaves as well as any damaged ones.
    2. Place the artichokes in boiling salted water for at least 30 minutes; drain.
    3. Prepare the vinaigrette dressing by mixing the salt, pepper and vinegar together in a bowl. Add the oil in a small steady stream while whisking to form an emulsion.
    4. Start by eating the artichokes leaves dipped in the vinaigrette. Once you reach the heart, discard the small leaves and choke. Cut the heart into small pieces and dip into the vinaigrette or fill the cavity with vinaigrette and slice afterwards.


    Note that the cooking time depends on the size of the artichokes. The artichokes are cooked when the leaves come off easily.
