Preheat oven to 200 C / 180 C Fan / Gas 6. Roll out the pastry a bit on a lightly floured surface and cut in half lengthways, then half widthways so you have 4 quarters. Cut each quarter into 3 so you have a total of 12 sections of pastry.
Place a sausage on each section of pastry. Beat an egg and brush the pastry around each sausage and fold the pastry over squeezing the edges together. Trim off any excess at the ends.
Place them on a baking tray covered with baking paper and brush liberally with the egg.
Bake for about 20 minutes or until lovely and golden.
