Dutch gingerbread loaf cake

    This loaf cake is made with a specific Dutch speculaas spice mix, but you could substitute with mixed spice. It's easy to make and smells delicious! Great with a cup of tea or coffee.

    Makes: 1 loaf cake

    • 375g self-raising flour
    • 300g soft brown sugar
    • 2 teaspoons speculaas spice mix (see note)
    • 1 egg
    • 300ml water

    1. Preheat oven to 180 C / Gas 4. GLightly grease a loaf tin with butter.
    2. Combine all the ingredients in a bowl and mix until just smooth.
    3. Pour mixture into the greased tin and bake for 75 minutes in the preheated oven or until a skewer inserted into the centre of the cake comes out clean.
    4. Remove from tin and allow to cool before serving.
