Mashed potato with apple

    This is a traditional Dutch dish called 'hete bliksem' which literally means 'hot lightning'. Potatoes are boiled with 2 types of apples, then mashed. Traditionally it's served with black pudding, but I usually serve it with pork belly. Can be served with fried onions, or with extra butter or with treacle. You can also boil the potatoes in stock instead of water.

    Serves: 4 

    • 1.5kg potatoes, peeled and diced
    • 500g tart cooking apples, peeled and diced
    • 500g sweet apples, peeled and diced
    • 8 slices of pork belly
    • salt and peper, to taste

    1. Boil the potatoes in a small amount of water until tender, about 20 minutes. Add apple after the potatoes have been boiling for about 10 minutes.
    2. Meanwhile pan fry pork belly until browned on both sides and slightly crispy.
    3. Drain potatoes and apples; mash together coarsely and season to taste with salt and pepper.
    4. Serve with pork belly.
