Simple chocolate fridge cake

    This fridge cake is called arretjescake in Dutch and is made with biscuits, sugar, cocoa, butter and eggs and requires no baking. It's a rich cake, so you'll only need a small piece. Be aware, there are raw eggs in this recipe.

    Serves: 15 

    • 2 eggs
    • 100g caster sugar
    • 50g unsweetened cocoa powder
    • 250g butter, melted
    • 350g rich tea biscuits or digestives, coarsely crushed

    1. Stir eggs and sugar together until smooth. Add cocoa powder and mix. Add cocoa mixture to melted butter. Stir in the biscuit crumbs.
    2. Add the mixture to a loaf tin lined with aluminium foil or greaseproof paper.
    3. Put the cake in the fridge for a couple of hours or overnight, till set.
