Easy peasy slow cooker chicken and sweet potato stew

    I created this recipe when I needed to go to church and we did not have any time to cook lunch when we came home so I chucked some stuff in the slow cooker and it ended up tasting really good.

    Serves: 4 

    • 1 tablespoon rapeseed oil
    • 450g chicken breast fillets
    • 4 sweet potatoes, quartered
    • 1 onion, chopped
    • 1 OXO® cube
    • 2 cloves garlic
    • 170g buckweat (optional)

    1. Pour the oil into your slow cooker along with chicken (you don't need to chop).
    2. Add the sweet potatoes, onion and stock cube.
    3. Cover with the lid and switch the slow cooker on High for 2 to 3 hours.
    4. When the chicken is nearly done, add the buckweat and 450ml water. Continue to cook with the lid on till water is absorbed.


    Instead of buckwheat you can use rice.
