    About this recipe: Eggs are scrambled with red and green peppers, jalapeno peppers and chilli powder in this Mexican-inspired brunch dish.

    Serves: 1 

    • 2 eggs
    • 85g diced onion
    • 60ml milk
    • 2 tablespoons diced green pepper
    • 2 tablespoons diced red pepper
    • 1 jalapeno pepper, seeded and diced
    • 2 teaspoons Mexican chilli powder
    • 1 teaspoon onion granules
    • 1/2 teaspoon ground cumin
    • 1 dash ground cinnamon
    • salt and freshly ground black pepper to taste

    1. Whisk eggs together in a bowl. Mix in onion, milk, green pepper, red pepper, jalapeno pepper, chilli powder, onion granules, cumin, cinnamon, salt and pepper.
    2. Heat a large pan over medium-high heat; lightly grease with oil. Pour in egg mixture; cook and stir until golden brown, about 5 minutes per side.
