Spicy Guacamole Dip

    My mum loves this recipe! Really quick and simple to make with fantastic results. Serve with Nachos for a yummy Mexican style dish - or just eat it straight out of the bowl!

    Serves: 6 

    • 3 ripe avocados, peeled and stones removed
    • 3 cloves of garlic, crushed
    • 1/2 Scotch bonnet or green chilli, de-seeded and finely chopped
    • 10-15 cherry tomatoes, diced
    • dash of lemon or lime juice
    • salt to taste

    1. Make sure ingredients have been chilled in the refrigerator first (this saves time as you don't need to chill the guacamole before serving).
    2. First lightly mash the avocados in a bowl using a fork so that they are still relatively chunky. Then add the garlic and chilli. Mix thoroughly then add tomatoes and lemon/lime juice and stir through again. Add salt to taste.
