Soup maker chicken noodle soup

    I usually go for smooth soup (I make it in my Morphy Richards soup maker). Last night I wanted a light dinner but I needed it to be substantial enough to fill me up. By adding in the noodles and the cubes of potatoes it created a nutritious and filling meal. The only extra I would recommend adding is perhaps some green beans or other green vegetable to make it a complete meal. The stock you use in this recipe is important for the taste. Homemade is preferable but not always feasible. If you don't have any homemade go for the best quality stock you can buy - the fresh stock you get in supermarkets is great, or the little Knorr® stock pots. You can use chicken for the meat, or any other leftover meats you might have from another meal.

    Serves: 4 

    • 250g cooked chicken, shredded
    • 200g potatoes, peeled and cubed
    • 70g carrots, peeled and chopped
    • 100g egg noodles
    • 3 cloves garlic, crushed
    • juice of 1 lemon
    • 1 litre chicken stock

    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Add all the ingredients to your soup maker, breaking the noodles up into small pieces as you put them in.
    2. Stir to combine the ingredients.
    3. Follow your soup maker instructions, especially if there are MAX or MIN fill levels.
    4. Put the lid on and select the chunky setting.
