Sam's cheesecake brownies

    This wonderful looking brownie will fill your stomach in just one bite.

    Serves: 9 

    • 110g dark chocolate (70% cocoa solids)
    • 110g unsalted butter
    • 150g caster sugar
    • 60g plain flour
    • 1/4 teaspoon salt
    • 2 medium eggs
    • For the cheesecake mixture
    • 225g cream cheese
    • 50g caster sugar
    • 1 teaspoon vanilla extract
    • 1 medium egg

    1. Preheat the oven to 160 C / Gas 2-3. Butter and flour a 23cm square cake tin.
    2. Melt the chocolate with the butter in a bowl set over a pan of simmering water. Remove from the heat, add the sugar and stir, then leave to cool slightly.
    3. Sift the flour and salt into a large bowl.
    4. Add the eggs to the chocolate mixture, beating after each one until it is very glossy. Lightly fold in the flour and set aside.
    5. Beat the cream mixture with the sugar in a bowl for the cheesecake mixture. Add the vanilla and egg and mix.
    6. Spread the chocolate mixture in the prepared tin evenly top with the cheesecake mixture and using a sharp knife, gently swirl it into the chocolate mixture.
    7. Bake for approximately 30 minutes, or until just set in the middle. Leave to cool in the tin for 15 to 20 minutes before cutting into squares and serving.

    Yum yum yum! I used slightly less sugar than in the original recipe, and Quark instead of cream cheese for the topping, but still plenty sweet enough and VERY chocolatey. Would certainly make again  -  12 Jan 2017


    Easy recipe to follow but it doesn't taste great. It's not sweet enough (despite adding white chocolate to the cream cheese mix). There's too much cheesecake mix compared to the brownie and the brownie itself isn't very flavourful either. Disappointing.  -  04 Apr 2018
