Tasty pasta omelette

    This tasty pasta omelette will allow you to use up leftover pasta and will reward you with a delicious dish. You just have to try this recipe!

    Serves: 4 

    • 5 eggs, beaten
    • 100ml milk
    • 1 to 2 handfuls chopped cooked ham (optional)
    • chopped fresh herbs of choice
    • salt and freshly ground pepper, to taste
    • extra virgin olive oil
    • 1 clove garlic, peeled
    • 150 to 250g leftover pasta (eg spaghetti)
    • lots of grated Parmesan cheese

    1. Combine the eggs, milk, ham and herbs. Season with salt and pepper.
    2. Heat a drizzle of olive oil in a frying pan. Add garlic and heat till it becomes lighter in colour, then remove and discard.
    3. Add the leftover pasta to the frying pan and let it fry for a couple of minutes without stirring.
    4. Cover the pasta evenly with the egg mixture. Leave to cook for a few minutes and then add the grated Parmesan, cover with a lid.
    5. Leave to cook on a fairly low heat for 15 to 20 minutes. Turn the omelette and cook without the lid for another 5 minutes or so.
