Gluten free holly leaf biscuits

    This is a wonderful gluten free biscuit recipe, perfect for Christmas!

    Makes: 12 biscuits

    • 100g butter, room temperature
    • 50g caster sugar
    • 1 teaspoon vanilla extract
    • 175g gluten free plain flour
    • 1 heaped teaspoon icing sugar
    • 1 teaspoon water
    • a few drops red food colouring
    • 100g ready to roll green icing

    1. Heat the oven to 150 C / Gas 2, and line a oven tray with baking paper.
    2. Cream the butter and sugar together until light and fluffy, then add the vanilla extract.
    3. Gently sift in the flour and mix in with clean hands.
    4. Roll on out on a lightly floured surface, until it is about 3mm thick. Cut out 12 holly leaves with your cutter. If you roll it out a bit thinner you will make more biscuits. Put on your baking tray.
    5. Bake for 25 minutes or they are golden brown. When the come out, leave until they are completely cooled.
    6. Meanwhile mix up your icing sugar, water and food colouring until smooth.
    7. Roll our you ready to roll icing, and cut out 12 holly leaves with the same cutter used for the biscuits.
    8. Place a holly leaf on each biscuit and then, with a fine paint brush, dot on the icing to create the berries.
    9. Enjoy!
