250ml cold milk
2 tablespoons fine semolina
1 teaspoon sugar
1 pinch salt
1 knob butter
fresh fruit, jam or cinnamon sugar for topping

Add cold milk to small saucepan. Add semolina, sugar and salt. Put on medium heat and bring to the boil, whisking constantly to avoid lumps.
As soon as mixture gets close to boiling point (watch carefully it will start rising quickly), lower heat, cook 2 more minutes, stirring. Immediately take off heat, cover, let stand for 2 more minutes. Remove cover and add butter. Stir, top with jam or fresh fruit an sprinkle with cinnamon sugar. Serve immediately.
