Egg free semolina tea cake

    This easy and quick egg free cake is made with fine semolina.

    Makes: 1 cake

    • 250ml soured cream or natural yogurt
    • 200g caster sugar
    • 1 teaspoon bicarbonate of soda
    • 100g plain flour
    • 85g fine semolina
    • 5 tablespoons neutral tasting vegetable oil

    1. Mix soured cream, with sugar until dissolved. Add bicarb of soda and mix thoroughly. Let stand for 7 minutes.
    2. Add flour, semolina and oil and mix.
    3. Preheat oven to 180 C / Gas 4.
    4. Butter a 23 or 25cm springform tin and dust with flour. Transfer mixture to the prepared tin.
    5. Bake for 25 minutes, then check for doneness every 5 minutes. When toothpick comes out clean from the center, your cake is ready.


    This cake is versatile. You can add any chopped dried fruit or currants to the mixture, and/or spread the cake with jam or dust with icing sugar after baking.
